- 2 boneless skinless chicken breast halves, cut into thin strips
- 9.85 ml cajun seasoning
- 29.58 ml butter or 29.58 ml margarine
- 1 green onion, sliced
- 236.59-473.18 ml heavy cream
- 1.23 ml dried basil
- 1.23 ml lemon-pepper seasoning
- 1.23 ml salt
- 0.61 ml garlic powder
- 0.61 ml pepper
- 113.39 g linguine, cooked and drained
- grated parmesan cheese (optional)
directions
- Place chicken and Cajun seasoning in a bowl or resealable plastic bag, toss or shake to coat.
- In a large skillet over medium heat sauté chicken in butter until almost tender, about 5-7 minutes.
- Add onion; cook and stir for 2-3 minutes.
- Reduce heat.
- Add cream and seasonings -- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon-pepper seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper ; heat through.
- Add linguine and toss; heat through.

This really is very good! I can't ever leave a recipe alone, though, & did add sautéed mushrooms & a few dashes of Frank's hot sauce. I agree that the parmesan is a must. With or without my few additions, the flavor is delicious & my husband who hates white sauces but loves cajun & creole dishes even liked it so it's a keeper.

This was fantastic!! I used about 500g chicken breast (cubed not sliced...didn't read the instructions correctly :oops: ) I added 1 cup cream and around 3/4 cup milk (tried to reduce the calories slightly)upped the sliced green onion to around 1 cup and used penne in place of linguine....and lots of freshly grated parmesan YUM!! Thanks for sharing...this goes into our favourites book!
