Buttered Homemade Noodles

  • In a mixing bowl, stir together the yolks, whole egg, and water.
  • Add 3 cups of the flour and mix well to combine into a dough. Sprinkle kneading surface with the remaining flour. Turn dough out onto floured surface. Gently knead dough into a ball. Let rest for 15 minutes.
  • On floured surface, roll out dough to 1/16-inch thickness. Let dry for 1 hour.
  • Cut into strips at a width you prefer (1/4 to 3/4 inch wide).
  • Cook in boiling salted water* for 4 to 6 minutes or until tender.
  • Drain and toss noodles with butter or margarine. Sprinkle with crushed crackers.
  • **Note:** Instead of water, you can cook the noodles in boiling broth, if you like.

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
