i like making this when we have company,because you make them the day before.

If I make it again, I'll use a whole green pepper and some celery, cooked with the sausage. I used Chorizo. Served with refried beans and Yucatan-Style Chicken Lime soup.

  1. mix sausage, green onion celery or green pepper.
  2. mix eggs milk flour and garlic powder.
  3. place 1/2 cup meat mixture in middle of tortilla.
  4. roll and place in 9 x 13 inch pan seam side down.
  5. pour egg mixture over rolls.
  6. cover and refrigerate overnight.
  7. bake coverd 45 to 50 minutes or until set.
  8. sprinkle with cheese bake 5 more minutes.
  9. let stand 10 minutes before serving.
  10. garnish with green onion and chopped tomatoes.
  11. serve with enchilada sauce if desired.
