Broccoli and Cheese Pie

This recipe was highly recommended to me by a coworker. It comes from The Toronto Humane Society's Vegetarian Cookbook. Don't be put off by the crust. It simply involves combining the ingredients and pressing into a pie plate.

Had this for dinner tonight, searched recipes based on the ingredients we had and this one was just perfect. Very easy to make - doubled the quantities so took longer to cook, but you'd expect that. I made a gluten free version using GF flour and it worked great and was yummy. I had hubby chopping up the vegies while I was preparing the base, then got him to do the washing up while I combined the mix, put it in the oven and put my feet up. Highly recommend using the hubby in this way! LOL

  1. Combine the first 5 ingredients and press into a 9-inch pie plate.
  2. Place broccoli in pie plate.
  3. Combine milk, onion, mushrooms, salt, nutmeg and pepper in a saucepan and simmer for a few minutes.
  4. Stir 1/2 cup of this mixture into the eggs, then add eggs into the hot mixture and pour over the broccoli.
  5. Bake at 400F for 15 minutes, reduce heat to 375F and continue baking for another 30 to 35 minutes or until firm.
  6. Sprinkle final 1/2 cup cheese on top of pie.
  7. Let stand 5 minutes and serve.
