CRUST
- 3⁄4 cup pecans, chopped
- 2 tablespoons vanilla extract
- 1⁄2 teaspoon sea salt
- 1⁄4 cup pitted medjool dates

FILLING
- 1 cup blackberry
- 1 cup blueberries
- 1⁄3 cup Agave (optional)

GARNISH
- mint, Fresh
directions
- Pulse crust products in a food processor.
- Place processed crust ingredients in a baking dish.
- Place filling on top (you can drizzle the agave over the berries) and garnish.

Well, I had to sub quit a bit. I thawed out frozen blue, black and raspberries. Used almond meal, 1 T vanilla (even that was pretty strong) and 2 T honey instead of dates. The recipe was pretty vague on the size of the dish, so I used an 8" pie pan and it wasn't enough to cover the sides too. I would make more crust next time, however, I couldn't get it out of the pan (neatly), so I would try a dry sugar next time. I don't have a food processor to process the dates. I drizzled a tiny bit of agave (all I had left) and some powdered sugar. It tasted great, but was hard to serve. Tagged in Fav's of 2009 tag.
