ingredients
- 56.69 g ground turkey
- 236.59 ml reduced sodium black beans, canned, low-sodium
- 1 tomatoes, medium
- 1 bell pepper, green, medium
- 12.32 ml extra virgin olive oil
- 14.79 ml cilantro, fresh
- 2 whole wheat tortillas
- 28.34 g low-fat cheddar cheese
- 29.58 ml salsa
- 29.58 ml fat free sour cream
- 236.59 ml grapes
directions
- Cook ground turkey, drain.
- Drain and rinse black beans. Wash and chop tomato and bell pepper.
- In a small bowl, combine tureky, black beans, tomato, bell pepper, olive oil, and chopped cilantro. Mix lightly.
- Spoon half of black bean mixture onto each tortilla.
- Top each tortilla with half of the cheese, salsa, and sour cream.
- Roll up tortillas and enjoy with a glass of cold water or other calorie-free, decaffeinated beverage.
- Serve with fresh, washed grapes.

Always looking for quick fix meals that fit my eating plan, this drew my attention. The results are good but a lick short on flavor. I think simply adding a few spices such as garlic, chili powder, or cumin to the ground turkey would make a big difference. Adding a little onion with the green pepper would also work well. I served my burrito lunch with watermelon rather than grapes. Thanks Tee Angel. Made for PAC Fall'09.
