- 2 clove garlic, peeled
- 29.58 ml fresh lime juice
- 14.79 ml fresh grated ginger
- 14.79 ml tomato paste
- 4.92 ml ground cumin
- 4.92 ml chili powder
- 1.23 ml salt
- 2.46 ml louisiana-style red hot pepper sauce
- 59.14 ml chopped cilantro or 59.14 ml fresh basil
- 2 scallions, sliced
- 538.64 g can black beans, rinsed and drained
- 236.59 ml coarsely chopped tomatoes
directions
- In small saucepan of simmering water, cook garlic for 3 minutes to blanch.
- Drain well.
- In food processor, combine garlic, lime juice, ginger, tomato paste, cumin, chili powder, salt, hot pepper sauce, and 2 tablespoons of water and process until blended.
- Add cilantro, scallions, and beans and process with on/off pulses until combined but still chunky.
- Transfer dip to serving bowl and stir in tomato.
