- 44.37 ml oil
- 0.61 ml asafoetida powder (hing)
- 4.92 ml cumin seed (jeera)
- 453.59 g okra (sliced into 1/2 inch rounds)
- 14.79 ml ground coriander (dhania)
- 4.92 ml ground cayenne pepper
- 4.92 ml turmeric (haldi)
- 4.92 ml salt
- 4.92 ml mango powder (amchoor)
- 29.58 ml flour (chana flour or besan)
- 236.59 ml cherry tomatoes (quartered)
- 118.29 ml red bell pepper (diced)
- 118.29 ml long beans (cut in 1 inch pieces)
- 236.59 ml chicken stock (or tomato sauce)
directions
- Heat oil in a skillet on med/high.
- Add the cumin seeds and asafoetida, stir for one minute.
- Add the okra and long beans, stir for one minute.
- Reduce heat to medium and cover for 3-4 minutes.
- Add the coriander, cayenne and turmeric. Stir and cover for 2-3 minutes.
- Add the flour, stir well.
- Add the tomatoes and bell peppers, stir and cover for 2-3 minutes.
- Add the salt, mango powder, stir thoroughly.
- Add chicken stock or tomato sauce and stir, bring to a boil.
- Turn off heat & re-cover for another 2 minutes.
- Serve over rice.
