Based on the famous Ginger Cookies from The Planet Bakery in Peterborough, ON, these are so good that people will always ask you for the recipe. So moist!
- 1 cup brown sugar
- 3⁄4 cup butter
- 1⁄4 cup molasses
- 1 egg
- 2 cups flour
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 2 teaspoons ginger
- 2 teaspoons cinnamon
- 1 teaspoon ground cloves
- Cream together brown sugar, butter, and molasses. Beat in the egg.
- In a separate bowl sift together flour, baking soda, salt, ginger, cinnamon, and cloves.
- Add flour mixture to brown sugar mixture and mix thoroughly. Roll into balls, dip in white sugar.
- Bake at 375 degrees for 8-10 minutes on an ungreased cookie sheet.
I just finished making these. The batter was much to soft to roll into balls.....perhaps chilling time was left off the recipe? Not having the time to try chilling today, I put heaping teaspoons on parchment lined sheets and sprinkled sugar on top. Baked for 8 minutes. They turned out just fine and have that wonderful ...take me back to grandmas kitchen flavor! I will make them again.
