Best-Ever Breakfast Casserole Recipe

"I thought this might be boring based on the ingredients, but it was terrific. I used regular potatoes and left the skins on and diced them, and they cooked up nicely. I also used Canadian Bacon in place of the ham. I'd probably add onions or better yet chives if I made again. Recipe courtesy of www.thewholesomedish.com. Serving size is estimated."

  • Preheat oven to 350.
  • Add the frozen potatoes, ham, and cheese to a large bowl.
  • Toss to combine. Pour the mixture into a 9x13 inch baking dish that has been greased. The recipe calls for cooking spray, but I don't use that. I use butter wrappers that I save or just plain butter.
  • In a large bowl, whisk the eggs with the milk, salt, and pepper. Pat everything down with a wooden spoon.
  • Bake for one hour, uncovered. The center should be set and the edges should be golden brown.
