I love this fresh very healthy salad where the beetroot is definitely what makes it! I used a pretty big/medium local organic beet which I peeled over an aluminum foil lined cutting board putting a plastic bag on my hand when needed, and the whole time while grating it, I omitted the green pepper out of distaste, I used romaine lettuce which I sliced somewhat thin, less spring onion, to taste, organic apple cider vinegar, freshly squeezed lemon juice, tahini instead of sesame oil as that is what I had on hand, sea salt, plus the rest of the ingredients. I ate 3/4's of this salad as dinner!! I would make this again for a very healthy & tasty salad for myself. Made for Please Review My Recipe: from 14 August 2011 ~

  1. Peel and grate beetroot and carrots. Chop other vegetables and mix together.
  2. Sprinkle with vinegar, lemon juice and sesame oil. Add salt and toss.
