- 1 ripe large avocado
- 1 (15 ounce) can black beans (organic-include some liquid)
- 1 tablespoon chia seeds
- 1 -2 garlic clove
- minced jalapeno
- 4 tablespoons sour cream
- 1 cup corn
- juice of a limes or lemon, to taste
- 1⁄2 teaspoon cumin
- salt and pepper
- chopped cilantro
- 1. Blend all ingredients in food processor except the corn, cilantro & minced Jalapeno until smooth.
- 1 Mix in corn, jalapeno and cilantro.
