  • 9 eggs, separated
  • 34 cup sugar
  • 1 12 cups walnuts, ground
  • 1 tablespoon flour
  • Filling

  • 3 whole eggs
  • 23 cup sugar
  • 3 -4 tablespoons strong coffee

  • Combine egg yolks and sugar.
  • Add ground walnuts and flour and fold in beaten egg whites.
  • Bake at 350 degrees F.
  • for 10-20 minutes.
  • Roll out onto a sugared towel, starting at long side.
  • Filling: Cook until thick and let cool.
  • Then cream 1/2 lb sweet butter and add 2-3 Tbsp.
  • rum.
  • Add enough cocoa for desired colour.
  • Unfold the roll, and spread on the filling, reserving some for outside.
  • Reroll and spread outside with reserved filling.
  • Cut roll on an angle at both ends and assemble in a log fashion.
  • Cover with ground nuts and stud with slivered almonds.
  • 16x18 pan or large jelly roll pan lined with greased wax paper.

I have tested and tried over 10.000 recipes over the last 30 years on my beloved husband who is now residing in a Long Term Facility with Dementia, so I have to make meals for one, healthy and simple. />My pet peeve is too much garlic in a creamy rich sauce. <br />My favourite cookbook is the one I have made myself over the past 40 years. <br />My interests are knitting Scandinavian socks, sweaters, reading. If I had a month off I would visit our adult children and 4 year old Granddaughter, who resides in British Columbia and Florida, and cook them their favorite meals.</p>
