Basic Whipped Sweet Potatoes

- 2 lbs fresh sweet potatoes (yams)
- 1⁄2 cup butter
- 1⁄3 cup hot milk
- 4 tablespoons sugar
- 1 1⁄4 teaspoons allspice
directions
- In a medium saucepan, cook sweet potatoes in boiling water to cover until tender, 25-30 minutes. Drain, peel off skins. Place potatoes in a bowl. Mash with potato masher or electric mixer until smooth. Add butter, milk, sugar, and allspice; mix until fluffy and blended. Serve at once. Or, place in a buttered 1 quart casserole. Cover and bake in a preheated oven at 350* until hot, 20-30 minutes.
