  • Heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer.
  • Add potatoes and yellow onion.
  • Season with salt and pepper.
  • Cook until crispy on all sides-about 8-10 minutes,stirring frequently.
  • Reduce heat and cook until tender when pierced with a fork,5-10 minutes.
  • Remove from heat.
  • Put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano.
  • Srir to coat.
  • Return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat.
  • Crack the eggs into the skillet and season with salt and pepper.
  • Cook over high heat for 2 minutes or until just whites are cooked.
  • Remove from heat.
  • Divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap.
