- 1 tablespoon vegetable oil
- 2 teaspoons vegetable oil
- 2 cups potatoes, diced into 1/2 inch pieces
- 1⁄2 cup yellow onion, thinly sliced
- 1⁄4 teaspoon kosher salt
- 1⁄4 teaspoon pepper
- 1⁄2 cup barbecue sauce
- 1⁄4 cup green onion, sliced thin and green part only
- 1 teaspoon oregano, dried
- 2 eggs
- 2 (10 inch) tortillas
directions
- Heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer.
- Add potatoes and yellow onion.
- Season with salt and pepper.
- Cook until crispy on all sides-about 8-10 minutes,stirring frequently.
- Reduce heat and cook until tender when pierced with a fork,5-10 minutes.
- Remove from heat.
- Put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano.
- Srir to coat.
- Return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat.
- Crack the eggs into the skillet and season with salt and pepper.
- Cook over high heat for 2 minutes or until just whites are cooked.
- Remove from heat.
- Divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap.
