Banana Flax Muffins

"This is a recipe I came up with for flax seed using recipe #9176 by Evie*. I tried changing it and it worked perfectly. I sometimes add dried or freeze-dried fruit to these. This recipe make a wonderful flax muffin. The addition of flax seed to recipes gives a nutty flavor without nuts."

  • Preheat oven to 375°F.
  • Grind flax seeds.
  • Mash bananas.
  • Mix bananas, flax and egg.
  • Mix dry ingredients together and add.
  • If needed add milk, one tablespoon at a time.
  • It depends on the size of your bananas and the consistency.
  • Fill greased muffin tins.
  • Bake for 20 minutes.

  2. We really liked these. I followed the directions, then added 1/2 cup applesauce and a few tbsp oil, plus a little cinnamon, cloves and ginger. Yum!
     
  3. I"ve had this recipe saved for some time now and was looking for a healthy muffin to make for the NewYear. The only deviance I made was to use 3/4 cup splenda in place of the sugar. I reduced the amount of flax down to 1/2 cup since I was using flax meal. Really good muffin!!!
     
  4. Easy enough for a 6-year-old to make. Super Delicious and effective. Personal tip: Make sure your nanners are brown.
     
  5. they are pretty good. a little dry. will make them again and might add another 1/2 banana or tablespoon of milk. :)
