This is a recipe I came up with for flax seed using Banana Muffins by Evie*. I tried changing it and it worked perfectly. I sometimes add dried or freeze-dried fruit to these. This recipe make a wonderful flax muffin. The addition of flax seed to recipes gives a nutty flavor without nuts.
- Preheat oven to 375°F.
- Grind flax seeds.
- Mash bananas.
- Mix bananas, flax and egg.
- Mix dry ingredients together and add.
- If needed add milk, one tablespoon at a time.
- It depends on the size of your bananas and the consistency.
- Fill greased muffin tins.
- Bake for 20 minutes.
I"ve had this recipe saved for some time now and was looking for a healthy muffin to make for the NewYear. The only deviance I made was to use 3/4 cup splenda in place of the sugar. I reduced the amount of flax down to 1/2 cup since I was using flax meal. Really good muffin!!!
We really liked these. I followed the directions, then added 1/2 cup applesauce and a few tbsp oil, plus a little cinnamon, cloves and ginger. Yum!
