- 100 g unsalted butter
- 200 g granulated sugar
- 3 pureed bananas
- 3 whole eggs
- 225 g cake flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons fresh milk
- 2 teaspoons dark rum
directions
- Cream butter and sugar together until fluffy.
- Combine the pureed bananas with the eggs, and slowly add this to the sugar-butter mixture. Mix well.
- Sift together the flour, baking powder and baking salt,and add this to above mixture.
- Add in the milk and the rum.
- Pour mixture into a greased cake pan or large loaf tin.
- Bake at 180C for 45 minutes.

What a superb cake! It manages to be both light and moist at the same time, with great banana flavor enhanced by the hint of rum, and a fairly fine crumb. Slices well even when warm. Baked in a silicone loaf pan, it developed a golden, delicate crust on the sides and bottom. I am glad I decided not to add nuts, but this might be good served with barely sweetened, softly whipped cream sprinkled with some toasted pecans-maybe some mango slices on the plate?
