This recipe combines my two favorites: Roast and Balsamic Vinegar. The vinegar is not overpowering but gives this easy roast a great kick! We love this with homemade mashed potatoes.

  1. Place roast in crock pot.
  2. Add all ingredients.
  3. Let marinade 4 hours or overnight. (Overnight is best).
  4. Turn a few times to coat.
  5. Cook roast on low until internal temp is 145-160, depending on preference of doneness, 6-8 hours.
  6. Remove remaining juices from Crockpot; pour in a saucepan and boil for 2 minutes.
  7. Serve over sliced meat.
