My boyfriend and I enjoyed these as a little snack after a long day of hiking. They tasted very good, but next time I make them, I will not layer them as suggested because they didn't get crispy when they baked. Instead, I will bake them in a single layer on a baking sheet. Thanks Dancer!
- 2 lbs sweet potatoes, peeled and cut into 1/8 inch thick slices
- 1 1⁄2 teaspoons sugar
- 1 1⁄2 tablespoons lemon juice
- 1 1⁄2 teaspoons lowfat margarine, melted
- 1 tablespoon pepper
