  • Pre heat oven to 200°C.
  • Wash the potatoes and then cook whole in their skins in a large pot of boiling salted water until tender.
  • Cool slightly then cut into 2cm slices and place in a lightly oiled baking dish.
  • Sprinkle wih the crushed garlic.
  • Place the fish fillets on top of the potatoes.
  • Drizzle with olive oil then scatter with the tomatoes.
  • Season with salt and pepper and cover with tin foil.
  • Bake for 15 minutes.
  • Remove foil, sprinkle the lemon rind over and bake another 10 minutes or until fish is cooked.
  • Sprinkle the basil leaves over and serve.

  1. This is okay and nice for a change! I made a few changes to this recipe though by adding one onion sliced and using two large potatoes (instead of the salad potatoes). I also added lemon slices to the pan and used dried basil instead of the fresh basil indicated in the recipe. I also used Pam for oiling the baking dish. I don't think any of these changes made a lot of difference in the recipe and felt the dish needed a bit more of something to make it stand out (without adding calories/fat). Thanks for sharing!
