This may be a traditional dish, but the lemon and rosemary really gave it a wonderful flavor and made it into something special. I sprinkled the ingredients over the hens and just basted once the juices started to accumulate. They came out very moist and delicious. I served with stuffing and veggies. Thanks for sharing!

I felt like I was eating a gourmet meal! It was fabulous. I doubled the lemon juice(used fresh lemon)and the rosemary along with 2 crushed garlic cloves. I also put 2 lemon slices inside the cavities before roasting. The flavor of these hens was just wonderful. I have the need to go buy a few more hens right now!!!! Thanks Mimi

Wonderful flavor - I roasted potatoes around the hens (I half cooked them first) awesome. The one problem I had was that there was not enough juice to baste every 10 minutes in fact there was not enough to baste more than once. I added 2 oz of Vodka to the bottom of the pan and swirled it around this made enough "Juice" to baste the hens and get the potatoes absolutely golden brown. Easy delicious recipe. Will do it again

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper)
I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke)
On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
