Baked Cheese Grits

  • 4 cups milk (Whole is best, 2% is fine.)
  • 1 cup quick-cooking grits
  • 34 cup butter (I recommend real butter.)
  • 12 cup grated parmesan cheese
  • 1 triangle Laughing Cow cheese (I sometimes use 1 C of shredded sharp cheddar instead.)
  • 12 teaspoon salt

  • Barely bring milk to a boil, add grits slowly stirring the whole time. Cook time for grits may vary so follow the time on the quick cooking grits box.
  • When grits are done, add 3/4 stick of butter, add cheese slowly and add the salt.
  • Pour into a 13x9 pan.
  • **VERY IMPORTANT** Let the grits cool, either sitting on the counter top or in the fridge.
  • Once cool, poke holes in the top of the grits (I use the tip of a spoon).
  • Melt the remaining butter and pour on top of the grits.
  • Top with the grated parmesan cheese.
  • Bake for 40 minutes at 400 degrees.

I'm 23 years old, married, have a two year old son and a daughter due August 9th, 2009. My husband and I live in beautiful Kailua, HI (where we born and raised!) with our mother in law, aunt in law, and brother in law. We recently implemented a new cooking plan that I cook two nights a week, MIL cooks two nights a week, BIL cooks two nights a week, and my hubby cooks one night a week (but I think I'll end up with his nights, haha!) So I am here to find easy and quick recipes to prepare for a decent sized family! If you try any of the recipes I've actually posted, I'd love to hear your feedback, tips, and suggestions! I am a pretty novice cook and since my mother passed away when I was only 21, I have basically taught myself how to turn the stove on! Thank you! :)
