- 1⁄3 cup rolled oats (not quick-cooking)
- 1 1 cup soymilk or 1 cup almond milk
- 1⁄2 1/2 tablespoon agave syrup or 1/2 tablespoon packed dark brown sugar
- 1 small carrot, peeled and grated
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon grated nutmeg
- 1⁄2 teaspoon ground ginger
- 1 ounce seedless raisin (about 1 1/2 tbsp)
- chopped walnuts, for garnish
directions
- Combine all ingredients except walnuts in a small saucepan. Bring to a boil, then immediately reduce to a simmer and cook 7 minutes, stirring frequently, until very thick (about the texture of cake batter). Transfer to a bowl, sprinkle with walnuts and serve.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
