I recently posted my Aunt Willie Jo's Sweet Potato Pie Aunt Willie Jo's Sweet Potato Pie on here but another of my favorites that she made was her Shoepeg Corn, so I thought I would post it as well.
- 2 (15 ounce) cans white shoepeg corn (drained)
- 1 (4 ounce) can green chilies (diced)
- 1 (4 ounce) jar pimientos (drained)
- 1 (8 ounce) package cream cheese
- Put all into a saucepan and cook on low, stirring until cream cheese melts. Pour into serving dish and serve!
