I found this somewhere on the net, I haven't tried it yet. It is a quantity recipe, for about 10 lbs. of salad. Obviously you can change the quantity for your needs. Enjoy!
- 10 lbs boneless skinless chicken breasts
- 2 1⁄2 lbs mayonnaise
- 1 ounce Lawry's Seasoned Salt
- 1 ounce Lawry's Seasoned Pepper
- Chargrill Chicken, then Mix mayo and seasonings in a large bowl -- add cooked chicken and stir.
Easy as finding your way down the driveway..... this chicken salad is just so tasty. Granted the ingredient list is not long, nor is it an involved recipe, but sometimes the most simple treats are those that are the finest in life. I changed the serving size down to 2 portions which made it even easier. I had one very large chicken breast, and added 2 tablespoons mayonnaise, (I use *Hellmans* mayo) 1/8 teaspoon Lawry's Seasoning Salt, and 1/8 teaspoon of Lawry's Seasoned Pepper, added 1/2 stalk (diced) celery, and 1/4 yellow pepper (also diced) threw it in, mixed up, and put delightfully on top of fresh spinach leaves and made a delightful afternoon break.
