Arkansas Possum Pie

"Possum Pie is often joked about in AR, but in the Northwest part of the state, it shows up on dessert menus."

• Serves: 8

ingredients

• 1 graham cracker crust
• 6 ounces cream cheese, softened
• 3⁄4 cup powdered sugar
• 1⁄4 cup pecans, chopped
• 1 3⁄4 cups milk
• 1 teaspoon vanilla extract
• 1⁄4 cup vanilla instant pudding mix
• 1⁄3 cup instant chocolate pudding mix
• 1⁄2 cup heavy cream
• 1 teaspoon vanilla extract
• 1⁄2 cup chocolate cookies, crushed
• 15 pecan halves

directions

1. Beat cream cheese with sugar.
2. Pour into crust.
3. Sprinkle with chopped pecans.
4. Whisk the milk, 1 tsp vanilla and pudding mixes for 2 minutes.
5. Let stand for 2 minutes.
6. Spoon pudding mix over pecans.
7. Sprinkle with 1/4 C of the cookies.
8. Refrigerate for 4-6 hours.
9. Whip cream with 1 tsp vanilla.
10. Spread over pie.
11. Top with pecan halves and remaining cookie crumbs.

I made this recipe for ladies card day and everyone loved it. I used sugar free pudding mixes and lite cool whip instead of whipping the cream. It still turned out great.
