- 2 cups all-purpose flour
- 3 1⁄2 teaspoons baking powder
- 1 dash salt
- 1⁄4 cup brown sugar
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon clove
- 1⁄8 teaspoon nutmeg
- 2 apples
- 1 egg
- 1 cup low-fat buttermilk
- 1⁄4 cup oil or 1/4 cup melted butter

- 1⁄4 cup brown sugar
- 1⁄4 teaspoon cinnamon
- 1⁄8 teaspoon clove
directions
- Preheat oven to 400 degrees.
- Peel, core and mince apples.
- Mix together flour, baking powder, salt, brown sugar and spices. Blend in apples. Make a well in the centre.
- In a separate bowl, whisk together buttermilk, egg and oil. Pour into the well and blend until moist. Do not over mix.
- Fill greased muffin tins. If using, sprinkle with topping. Bake for 16 to 19 minutes.
- Allow to sit for about 5 minutes and remove from Muffin tins to a plate. Enjoy.
