A nice twist on the traditional coleslaw. Time listed does not include chilling time.
- 2 cups coleslaw mix
- 1 tart apple, unpeeled and finely diced
- 1⁄2 cup celery, finely diced
- 1⁄2 cup green bell pepper, finely diced
- 1⁄4 cup vegetable oil
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 teaspoon celery seed
- In a large salad bowl, whisk the oil, lemon juice, honey and celery seed.
- Add the coleslaw mix, apple, celery and green pepper. Toss to coat.
I really like this ~ light and tasty. I used key lime honey, which gave this a sweet, citrusy flavor. I had to make my own coleslaw as I didn't have any of the mix, but I had cabbage and carrots! This is a nice twist to a standard coleslaw with mayo. I like the citrus taste that comes through with the lemon juice...found it very refreshing & light tasting. I used a tart granny smith apple in it and skipped on the green bell pepper this time. I enjoyed it but the teens had mixed feelings on it with them all saying it was a bit too tart for them - so next time I think I'll use a milder apple and maybe fresh squeezed lemon juice and a dash more honey. Overall it is a nice change and would be great for BBQs and outdoor events as without the mayo it is safe to keep out! Made during my travels in ZWT6. Thanks for sharing!
For me there it was too oily but for DH he didn't like apples in it. Maybe he would have prefered it shredded than diced. Thanks iewe :) Made for ZWT9
