    This light and fresh salad makes a nice sweet side to any poultry dish, such as grilled chicken or turkey.

    Ingredients:

    Serves: 2

    Yield:

    salad

    Units: US | Metric

    • 2 carrots, shredded
    • 1 apple, julienned (preferably Pink Lady or Ambrosia)
    • 2 -3 tablespoons raisins (or a combination) or 2 -3 tablespoons sultanas (or a combination) or 2 -3 tablespoons craisins (or a combination)
    • 1 teaspoon cinnamon honey
    • 1 teaspoon lemon juice
    • 2 teaspoons citrus peppercorn vinaigrette dressing

    Directions:

      Combine the first three ingredients in a serving bowl and toss to combine.

      Whisk together remaining ingredients and pour over salad; toss to coat.
