  • Mix wheat bran and buttermilk. Set aside.
  • Mix flour, brown sugar, baking soda, protein powder and spices in a separate bowl.
  • Add buttermilk mixture to bowl of dry ingredients. Stir in egg. Add chopped apples and distribute evenly throughout mixture.
  • Line muffin pan with paper cups or grease pan. Spoon mixture into cups, about 3/4 full.
  • Preheat oven to 350 degrees. Bake for 15-20 minutes.
  • Let cool and enjoy!

I am a full time college student. I don't have a lot of free time, but when I do I love to bake. I'm a health food nut so I am always looking for ways to satisfy my sweet tooth, while still being nutritious. I love finding and trying out different recipes and making them my own by experimenting with different things. I am just really getting into cooking, and though I do enjoy it, I will always love baking more.
