- 4 cups old fashioned oats
- 2 cups whole wheat flour
- 1 cup brown sugar
- 1 cup coconut
- 1 cup chopped pecans
- 1⁄2 cup toasted wheat germ
- 1⁄4 cup golden flax seed
- 1 teaspoon cinnamon
- 1⁄2 teaspoon freshly grated nutmeg
- 1⁄2 cup frozen apple juice concentrate, thawed
- 1⁄4 cup honey
- 1⁄4 cup butter (1/2 stick)
- 1 teaspoon vanilla
- 12 ounces dried cranberries
directions
- Preheat oven to 300 degrees.
- In a large bowl, mix first 9 ingredients, (all the dry ingredients).
- Melt butter and warm honey in microwave. Stir in apple juice and vanilla. Add this mixture to dry ingredients and mix well.
- Spread granola on 2 large (12 by 17 inch) jelly roll pans.
- Bake in oven for 30 - 40 minutes, removing from oven to stir every 10 minutes. Let cool in pan on a rack; cool completely.
- Mix in dried cranberries.
- Store in plastic bags.
