Anna Quanity Bran Muffins

"This recipe came from my Aunt's Mother in law and has been a great go to fresh muffin in the morning recipe. Makes a large batch that you can keep refrigerated for up to a month. This way you can preprare any number of fresh muffins each morning!"

  • Pour boiling water over cereal and mix.
  • In a seperate bowl, cream shortening and sugar.
  • Beat in eggs.
  • Add Bran mixture and stir well.
  • Sift dry ingredients and add to creamed mixture, alternately with buttermilk.
  • Mix well.
  • Cover and refrigerate for up to 1 month.
  • Pour into greased muffin tin when ready to bake and bake at 400 degrees for 20-25 minutes.
  • If using dark muffin tin usually only takes around 20 minutes.
