A dense, yet crisp cookie with a wonderful almond flavor

Directions

  1. Pre-heat oven to 350 degrees.
  2. Cream together butter, oil and brown sugar.
  3. Add eggs and blend well.
  4. Add almond filling and almond extract and blend well.
  5. Stir in flour, baking soda and salt.
  6. Stir in almonds.
  7. Divide dought in half and shape each half into a log.
  8. Place logs on parchment paper lined cookie sheets.
  9. Bake for 35 minutes.
  10. Remove logs from oven and cool for 10 minutes.
  11. Lower oven to 325 degrees.
  12. Slice logs into cookie slices with a sharp knife.
  13. Place cookies back on cookie sheets, leaving spaces between cookies.
  14. Bake cookies for 20 minutes more.
  15. Cool on wire racks.
