- 1 lb ground beef
- 1 medium onion, chopped
- 2 cups stewed tomatoes
- 2 garlic cloves, minced
- Tabasco sauce, to taste
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- water
- 1⁄2 cup peanut butter
directions
- Brown ground beef and onion, drain well.
- Add stewed tomatoes, garlic, tabasco sauce, salt and pepper.
- Add water to make a medium sauce.
- Simmer 1/2 hour, add peanut butter and simmer 15 minutes more.

This is a simple and delicious meal. I wouldn't call it a stew. It had the consistency of a ground beef stroganoff. Thick and creamy. I did not add water but I didn't think it needed it. Served it over white rice with scallions on top. DH loved it, and since he is going through radiation treatment, he needs high fat, high protein and high calorie food, while not being spicy, so this fit the bill perfectly.
