African Groundnut Stew

"A simple dish from the African country of Mali; my kids considered this quite exotic when they were little! If you're making this for adults you can make it pretty zippy with the tabasco, but most little ones like it mild. Serve over brown or white rice. This recipe came from the old Whole Foods for the Whole Family from La Leche League Int'l."

  • Brown ground beef and onion, drain well.
  • Add stewed tomatoes, garlic, tabasco sauce, salt and pepper.
  • Add water to make a medium sauce.
  • Simmer 1/2 hour, add peanut butter and simmer 15 minutes more.

  1. This is a simple and delicious meal. I wouldn't call it a stew. It had the consistency of a ground beef stroganoff. Thick and creamy. I did not add water but I didn't think it needed it. Served it over white rice with scallions on top. DH loved it, and since he is going through radiation treatment, he needs high fat, high protein and high calorie food, while not being spicy, so this fit the bill perfectly.
