- 3 teaspoons dark sesame oil
- 2 (3/4 lb) chicken breasts, skinned and cut crosswise in half (bone-in)
- 5 scallions, finely chopped
- 1 tablespoon ginger, grated fresh
- 2 teaspoons ginger, grated fresh
- 1 cup chicken broth, reduced sodium
- 3 tablespoons soy sauce, reduced sodium
- 3 tablespoons red wine vinegar
- 2 tablespoons cilantro, fresh chopped
- 5 teaspoons honey
directions
- Heat 2 tsp sesame oil in large nonstick skillet on med-high heat.
- Add chicken, cook until browned. Set aside.
- Add 4 scallions and 1 tbsp ginger to skillet. Cook, stirring constantly, until fragrant.
- Add broth and 2 tbsp soy sauce; bring to boil.
- Reduce heat, simmer covered for 4 minute.
- Add chicken, return to simmer and cook covered until cooked through.
- Remove skillet from heat, set aside 10 minute.
- Transfer chicken to platter (use slotted spoon). Discard pan liquid.
- Combine remaining 1 tsp sesame oil. scallion, 2 tsp ginger, 1 tbsp soy sauce with vinegar, cilantro, and honey in small bowl. Serve with chicken.
