- 2 lebanese cucumbers, sliced into thin ribbons using a vegetable peeler
- 236.59 ml bean sprouts
- 236.59 ml snow pea sprouts
- 236.59 ml snow peas, topped and tailed
- 177.44 ml mung bean sprouts
- 15-20 cherry tomatoes, halved
- 1 yellow bell pepper, sliced thinly
- 118.29 ml raw cashews, roughly chopped
- 118.29 ml fresh cilantro
- 118.29 ml of fresh mint, roughly torn
- 2 limes, juice of
- 14.79 ml cold pressed olive oil
- 4.92 ml sesame oil
- 7.39 ml nama shoyu or 7.39 ml soy sauce
directions
- Arrange the bean sprouts and snow pea sprouts on a large platter.
- Toss cucumber, tomatoes, mung beans, bell pepper, cilantro, mint, lime juice, oils and soy sauce together and pile attractively over the top of the sprouts.
- Sprinkle cashews over the top and serve.
- Heavenly!
