A great make-ahead meal. I prepped it earlier in the day and stuck it in the fridge until I was ready to bake them. I doubled the recipe, forgot the parm (oops), used frozen spinach (since it's all I had in the house) and low-fat ricotta. They turned out perfectly. Everyone enjoyed them. Next time I'll quadruple the recipe and freeze half.
