  • 2 cups Simply Potatoes Rosemary & Garlic Red Potato Wedges, cut into 1/2 inch pieces
  • 1 frozen pizza (like Newman's Own White Pizza)
  • 2 tablespoons olive oil
  • 14 cup very thinly sliced red onion

  • Heat oil on medium heat in a skillet large enough to cook the dices potatoes without crowding. When the oil is hot (it will look wavy) add the potatoes and stir to coat with oil. Partially cook, stirring occasionally, in a single layer until lightly golden and slightly crisp (about 3 to 4 minutes). (Turn the temperature down if the potatoes are growing too fast). The potatoes will finish cooking in the oven. Take the frozen pizza out of packaging. Top pizza with potatoes and sliced onions. Bake pizza according to pizza package directions. This is good hot out of the oven and at room temperature making it perfect for a buffet or make ahead appetizer.
