ingredients
- 1 cup butter, softened
- 1 cup packed brown sugar
- 1 egg
- 2 teaspoons vanilla
- 3 cups quick-cooking rolled oats
- 1 cup all-purpose flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup raisins
directions
- With electric mixer, beat butter at high speed until fluffy and light coloured.
- Add sugar and beat until even fluffier.
- Add egg and vanilla, beat until batter is smooth.
- In separate bowl, whisk together oats, flour, baking soda and salt.
- Pour half of dry ingredients over the batter and stir with wooden spoon until there is no streaks.
- Stir in remaining dry ingredients.
- Stir in raisins.
- Scoop dough by level tablespoonfuls and drop onto lightly greased baking sheets.
- Making sure to leave about 2-inch space between cookies.
- Bake in oven preheated to 350°F for 8 to 10 minutes or until cookies are golden brown around edges.

I don't normally care for oatmeal raisin cookies, but I wanted to get away from chocolate so I tried these. I did add a cup of ground walnuts to boost nutrition and these were truly delicious and so simple, we made 2 batches in 3 days!! SO good, worth talking the time to rate (which I don't normally do). Thanks for sharing, will be making these over and over :)

I really enjoyed this recipe. I added 2 tsp Cinnamon just because I love the taste. I found the finished product to be nice and chewy. However I found it to be a touch dry or maybe dense would be a better way to describe it. I think that next time, I will use slightly less oatmeal (2 1/2c rather than 3). Other wise they were very easy to make and the kids loved them.
