Cidered Rice

- 1 1⁄2 cups long grain rice
- 3 1⁄2 cups apple cider
- 1 medium apple, peeled,cored,and chopped
- 1⁄3 cup raisins (I used dark)
directions
- Combine all ingredients in a saucepan.
- Cover, and bring to a boil.
- Stir frequently.
- Cook until liquid is nearly absorbed.
- Remove from heat.
- Stir, and replace cover.
- Let stand 5 minutes.
- Serve.
- (Sprinkle with a scant bit of sugar if not sweet enough.).
- **NOTE:When reheating leftover rice, add a splash of cider; cover and heat thoroughly.
- Stir to avoid cold spots.

This has really good flavour with a 1/2 tsp brown sugar added. I added the chopped apple at the end after cooking and it just steamed a little for a texture we prefer. I found the rice a lot stickier than we are used to but maybe it was because I used a different white Basmati rice than I usually do. I just made this to my own directions with the same ingredients called for. I served it with butternut squash and plain yogurt for a delicious meal. I will definitely make this again, hopefully with the rice not turning out so sticky. Made for Comfort Cafe - Snow Queens, Round 01/10.

Hello from beautiful northwestern PA. I am a self-employed gardener, so it is kind of obvious that I love the outdoors. I am a single parent of a great 11 year old son named Ryan, he is my joy. I just turned the big 4-0 this year... and SURVIVED!!! My favorite outside activities are working in the garden, and biking with my boys; favorite inside activity is baking, and trying new recipes out on the "guinea pigs"!! I love cookbooks and gardening books, and have a bunch of them... some old, and obscure, but very useful anyway.My biggest pet peeve is the mistreatment of children...makes my normally controlled red-head temper burn red-hot!! My passion is organic vegetable gardening... there is no place I would be than in my garden, growing safe, healthy food for my family.
