Pistachio Cake

• Serves: 5-8

ingredients

• 2 1⁄2 cups yellow cake mix
• 4 eggs
• 1⁄2 cup oil
• 6 7⁄8 ounces instant pistachio pudding mix
• 1 cup club soda
• 1⁄2 cup nuts (chopped)

• Glaze

• 3⁄4 cup confectioners' sugar
• 1⁄2 teaspoon vanilla
• 3 -4 teaspoons water
• food coloring, to tint

directions

1. Combine all ingredients. Beat 2 minutes at meduim speed. Bake in a greased and floured pan at 350 degrees for 50-60 minutes. When cool, make a glaze, mix until smooth, tint with food color and pour over cake.
