South African Chicken Curry

- 3 tablespoons olive oil
- 2 lbs chicken thighs, cut into bite size pieces
- 2 -3 small potatoes, peeled and cubed
- 1 large onion, chopped
- 1 tablespoon ginger paste
- 1 -2 tablespoon chili paste (depending on how hot you like it)
- 1 tablespoon garlic, minced
- 1 tablespoon good quality curry powder
- 2 teaspoons garam masala
- 1 (14 1/2 ounce) can diced tomatoes
- 1⁄2 cup chicken stock (you may also use water)
- 2 bay leaves
- 2 curry leaves
- 1 cinnamon stick
- 4 ounces plain yogurt
directions
- Start with a hot pan with olive oil - add onion and saute for a few minutes. Add ginger paste, sriracha, garlic, curry powder, garam masala and cinnamon stick. Saute for a few minutes until you make sort of a paste.
- Add chicken and saute until chicken is no longer pink.
- Add potatoes, tomatoes, curry leaves, bay leaves and chicken stock - bring to a boil.
- Reduce heat to simmer and cook uncovered for approximately 1 hour stirring occasionally.
- Add more chicken stock if you like it thinner.
- The curry should thicken and have a rich deep golden colour.

This was a a decent curry, if a bit bland. While I was cooking this, it smelled exactly like the great chicken curry from my neighborhood African restaurant, but by the time it was done it tasted completely different. I think it could use some more curry powder and garam masala, and it should taste perfect, though a bit untraditional.

This was an excellent curry, thank you! I used a Roasted Garam Masala, my favourite, and a Cape Malay curry powder. We liked the potatoes in this, very typical :), I cut the chicken into bite size pieces, personal preference. Very good recipe, Hedgiehog, made and enjoyed for PAC Fall 2011, thank you!

Mmm! this was a very nice curry. I made one substitution and used lamb meatballs rather than the chicken as I had them in the fridge and had to use them up. The rest of the recipe was made as was written I used madras curry powder as DH loves a good madras I served it with brown rice and a bit of coriander sprinkled on top we didn't have the yogurt maybe next time and I will make it with chicken.Thank you for posting a delicious recipe. Made for a spicy dish for November 2010.
