ingredients

• 3 medium cucumbers, sliced thin (pared)
• 2 eggs, beaten
• 1 teaspoon salt
• 1⁄4 teaspoon pepper
• 1 cup cracker crumb, finely ground
• 1⁄4 cup grated parmesan cheese
• oil, for deep fat frying

directions

1. Combine eggs, salt and pepper. Mix crumbs and cheese in a paper bag. Dip cucumbers slices in egg mixture, then shake in bag of crumbs until coated. Heat 1/4" oil in heavy skillet. Fry cucumber slices until tender and golden. Serve hot as an appetizer or vegetable.
