- 6 boneless skinless chicken breasts
- 6 thick slices hickory smoked bacon
- 1⁄3 cup light brown sugar
- 1 tablespoon chili powder
- 1⁄4 teaspoon ground cumin
- 1⁄4 teaspoon granulated garlic
- 1⁄2 teaspoon ground pepper
- 1⁄2 teaspoon red pepper flakes
- 1⁄2 teaspoon salt
- 6 whole-grain buns
- sliced tomatoes

tzatziki sauce
- 1⁄4 large cucumber
- 1⁄2 teaspoon plus 1/8 teaspoon salt
- 3 tablespoons finely diced red onions
- 1 large garlic clove, minced
- 2 tablespoons thinly sliced chives
- 3⁄4 cup sour cream
- 1⁄4 teaspoon Worcestershire sauce
- 1⁄2 teaspoon fresh lemon juice
- 1⁄4 teaspoon ground pepper
directions
- Preheat oven to 350°F.
- Line a baking sheet with foil. Grease a roasting rack and place in the pan.
- Wrap each chicken breast with bacon.
- Combine sugar and seasonings in a bowl. Sprinkle mixture over chicken. Place on prepared rack. Bake until chicken is cooked through, about 30 minutes.
- Transfer chicken to a cutting board. Let rest 5 minutes. Cut chicken into slices.
- Arrange chicken on buns. Top with tomatoes and tzatziki.
- For Tzatziki sauce, peel and seed cucumber. Grate it on a box grater. Sprinkle with 1/2 teaspoon salt. Let stand 2 minutes. Drain well. Mix cucumber with all remaining ingredients.

<p>I live in Hilliard, Ohio and I work for a restaurant equipment and design distributor. I hated to cook when I was young and did not really have a passion for it until I married my husband 13 years ago. He's a Mikey - will eat just about anything so he is a lot of fun to cook for. It is hard to say what my favorite cookbook is. I have the standard Betty Crocker that is about 30 years old and so beat up. But it is great for the basics. I love Taste of Home and other cooking magazines such as that. I tend to spend my time reading recipes, clipping them out and then storing them in a notebook according to category to be tried at a later date.
