Mixed Mushrooms, Bok Choy and Black Bean Sauce With Soba Noodles

  • 6 ounces buckwheat soba noodles
  • 2 tablespoons safflower oil, divided
  • 34 cup chicken stock
  • 2 tablespoons black bean garlic sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon arrowroot
  • 12 onion, halved and cut into 1/4 inch slices
  • 12 ounces baby bok choy, sliced crosswise into 1/2 inch piece
  • 1 portabella mushroom, halved and sliced into 1/4 inch pieces
  • 8 shiitake mushrooms, stemmed and thinly sliced
  • 8 large cremini mushrooms, thinly sliced
  • 2 ounces enoki mushrooms
  • 4 green onions, including half of greens, thinly sliced on the diagonal

  • Cook noodles according to package directions., Drain and return to pot. Toss with 1 tbsp oil, cover and set aside.
  • In a small bowl, combine stock, black bean sauce, soy sauce and arrowroot. Set aside.
  • In a large wok or skillet, heat remaining oil over medium-high heat until it shimmers. Add onions and stir-fry for 1 minute. Add bok choy and stir-fry for 1 minute. Add portobello mushroom and stir-fry for 1 minute. Add shitake and cremini mushrooms and stir-fry for 2 minutes, or until all mushrooms in wok are tender. Add stock mixture and enoki mushrooms. Cook stirring occasionally, until sauce comes to a boi and thickens. about 1 minute.
  • Serve stir fry over noodles, sprinkled with green onions.

<ul> <li>In the summer of 2009, my DH and I moved to McGrath, Alaska (on the Iditarod trail) to spend our first of many years there. We live a semi-primitive life, only electricity for appliances, no indoor plumbing and wood for heat.</li> <li>We live in a small village of around 300 people. We are off the road system and everything is flown in. There are 2 stores here but they are small and what is sold is around 2 times what it costs to buy it elsewhere. Many people buy their groceries in other parts of the state and mail it back. Game meat (moose and bear) and fish are very popular. I work part time at the local post office. Most of our meals are soups, stews and one pot. DH cooks dinner about half the time.</li> <li>I like to fish, pick berries, and of course cook. I like to volunteer to bake for the local school bake sales. I like to collect recipes for foods that I have a lot of and can easily get, hence fish, local berries and rhubarb are very popular items on my availability list. I don't have much of a knack for making up my own recipes, so this site has been wonderful as I used to stick to around a dozen different recipes. Before I got married, Top ramen and mac and cheese in a box were my usual foods.&nbsp;</li> <li>My life was different before I moved here. I had more time to cook, now I have very little free time and I cherish the little time I get to sit down.</li> </ul> <p>This life is not for every one, but it is simple and we are learning to live life and enjoy it.
