Camping Boozy Campfire Cheese

  • 8 ounces brie cheese
  • 1 tablespoon brandy
  • 1 loaf bread baguette or 1 loaf sourdough bread
  • heavy-duty aluminum foil

  • Unwrap cheese and set in the center of a large piece of heavy-duty aluminum foil, about 12 by 12 inches. Perforate cheese by pricking it a few times with a fork, then sprinkle liquor over the holes.
  • Close the foil by wrapping the sides up around the cheese and sealing it at the top. Place wheel in the embers of the campfire, at the edge of the fire where the logs are smoldering and covered with a layer of gray ash (not in a direct flame). Cook, turning wheel occasionally with the tongs so all sides spend some time near the embers, until cheese is soft and melted, about 10 to 12 minutes.

  1. This was super delicious and very easy. The first time I made it on site and we put pepper and other seasonings on our bites as we ate. The second time I made it in advance without any issues. I poked it several times and pressed fresh ground pepper and paprika into the holes and poured the brandy over the top. I wrapped it well in tinfoil and put it in a ziptop baggie in the cooler. I think it was even better the second time as I really pushed the flavorings into the cheese.<br/>I'll make this pretty much every time I go camping and probably also do it on the grill at home!
