Cheese-Topped Tuna Casserole

ingredients
- 1 cup chopped onion
- 1 tablespoon butter
- 6 cups cooked rice
- 2 (6 ounce) cans tuna
- 1 (10 3/4 ounce) can cream of celery soup
- 1 -2 tablespoon lemon juice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1 cup shredded cheddar cheese
directions
- Cook onion in butter in a small skillet till tender.
- Stir in rice, tuna, soup, lemon juice, salt and pepper. Turn into a greased baking dish. Bake at 350* for 20 minutes or until heated through.
- Top with cheese and bake 5 minutes longer.

July 8, 2009: Our resident bionic woman lost her battle to cancer yesterday. MEP was a passionate, caring and beloved member of our community and she will be deeply missed. <br>I am a cancer survivor. I was diagnosed with Stage 4 Hodgkin's Lymphoma in 1994. It came back again in 1996, and I then had a bone marrow transplant.Was cancer free for 12 years.

<br>I also had a liver transplant in 2005 - and I'm still here...

<br>And now I can add that I've just been diagnosed with Secondary Myelodysplastic Syndrome (MDS) as a result of the above-mentioned cancer/bone marrow transplant.
