Apple-No-Pie-Cake

"A recipe sent to me from my Grandmother that she highly recommends. Not sure what the title is supposed to mean - but that's what she calls it! I would describe this as a light cake with tons of apple pieces in it, but in pie shape. The apple pieces are chewier than I expected; not at all like apple pie. This is a very sweet treat, so I prefer it with vanilla yogurt, instead of ice cream!"

  • Cut peeled apples into tiny pieces.
  • beat eggs, then add all ingredients except apples.
  • fold in apples.
  • put in lightly greased pie plate.
  • bake at 350F for 30mins.
  • serve with ice cream, yogurt or cheese slices.
  • Grandma recommends Granny Smith apples!

  1. This is always a tasty and moist. DEfinitely can cut back on sugar......I actually have cut it in half. The method here, I feel, could be improved on e.g. Beat sugar and oil together very well and then beat in eggs. Stir in dry ingredients and fold in apples, and, yes Ganny Smith are the best I feel too.
     
  2. This turned out to be a really tasty and easy recipe. The only changes I made were cutting the white sugar down to 1/2 cup and I baked it for about 40 mins. Cutting down the sugar didn't alter the taste but I definitely baked it too long. It hadn't set in the middle so I thought it needed longer but talking with some bakers in my family I realized that it would've set after it was out of the oven. It still tasted okay but was hard to get out of the pie plate.
