Mum's Easy Spiced Apple Cake

Topping
- 1⁄2 cup rolled oats
- 1⁄4 cup brown sugar
- 1 teaspoon cinnamon
- 25 g very cold butter (cut into 3 or 4 pieces)

Cake
- 2 medium apples
- 1 cup sugar
- 1 egg
- 125 g very soft butter (either melted or very soft)
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1 teaspoon salt
directions
- Make the topping first by placing all the topping ingredients into the food processor bowl and process with the metal chopping blade until the butter is chopped into small pieces. Do not over process or the rolled oats will be chopped too fine.
- Tip topping out of the bowl.
- Cake:.
- Without washing the bowl add in the apples which have been cored and cut into about 12 pieces. There is no need to peel them first.
- Process with metal blade until cut into fine pieces.
- Add the remaining cake ingredients. It is not necessary to sift the dry ingredients first but make sure the baking soda is not lumpy.
- Line the base of a 9"/23cm tin with baking paper & butter or spray the sides.
- Pour batter into prepared tin.
- Sprinkle over the topping mix.
- Bake at 350'F/180'C for approx 40-45 minutes or until the sides of cake shrink from the edge of the tin and the centre springs back when pressed lightly.
- Serve hot, warm, reheated or cold with whipped cream and/or custard as a dessert or cold in lunchbox.

I was apprehensive to try this one as i am not a fan of apple cakes. But i have all the ingredients on hand, decided to try it. It was very easy to prepare, did only the topping and the apples in the food processor (i only have the 2cup kind) and did the rest using a hand held mixer. Very easy to follow instructions and the cake turned out very light (and crumbly). My husband had 3 servings though he said he was very full after we had dinner. That says a lot!!

Lovely light cake - incredibly light texture actually, for all that it only has one egg and is made in the processor. I substitute Nuttelex (dairy-free)margarine for the butter which works just fine. I've made this twice now, once for home and once for a fund-raiser, and it's been very well-received both times. AND I love how easy it is to make! Thanks for posting... :)

I loved the ease of mixing this cake. The apples provide a lot of texture and moisture to the cake. I did use 1/2 sugar and 1/2 Splenda in the cake and baked it in an 8 inch square pan. This produced a cake with nice volume. It is great as is or can be easily dressed up with frozen vanilla yogurt and warmed caramel sauce.
