  • Line 2 baking sheets with aluminum foil.
  • Coat with nonstick cooking spray.
  • (I have found that using Release aluminum foil works better).
  • In a large saucepan over medium heat, combine sugars and corn syrup.
  • Heat to 250 degrees F (120 degrees C).
  • Remove from heat, and stir in butter until melted.
  • Gradually stir in cream.
  • Return to heat.
  • Cook, stirring constantly, until temperature reaches 242 degrees F (116 degrees C).
  • Remove from heat, and stir in vanilla and pecans.
  • Drop by spoonful onto prepared pans.
  • Cool completely, then wrap each piece individually with plastic.

  1. Since this is chewy not brittle, will humidity affect the outcome? Rain arrived early!
     
  2. I’ve made these before and they were perfect. I tried again today and they are waaay too soft! Can I put it all back into the pot(nuts and caramel) and reheat, maybe to higher than 244F? First time using digital thermometer it went to 245F. Thought I should maybe just use my old dial candy thermometer to 245F Soo sad. ??

  4. Oh, my wife used powdered sugar. I guess thats why it came out so runny.

  1. We got some fresh, new crop pecans from my best friend in Texas, so I made this recipe. There are only two of us, and I halved the ingredients. This still made the best caramel type praline I have ever had. The caramel is just firm, buttery and smooth. This is possibly my favorite candy ever.
     
  2. Wow, these are exactly like Lamme's. This recipe is excellent with accurate, easy to follow instructions. I was sure to use high quality, fresh ingredients and was so happy with the results as we're all those who got to eat these delicious chewy, nutty pralines.

  4. Excellent....I spent $55 on a box of Texas Chewy Pralines from Neiman Marcus.....never again! These are delicious...the hardest part is cutting the plastic wrap.....I think I need a shorter pot for the thermometer...to hard to hold it over the caramel...realllly hot Thank you!<br/><br/>Update<br/>Used shorter pot...much better...I found that if I cook on a higher heat (med high/high), it all goes much faster!<br/>Used teaspoons to drop on to non-stick aluminum foil...(tried to butter cookie sheet - doesn't work, sticks).<br/>Made 3 batches in one day...3 different sizes...small 15 grams, medium 20 grams, large 25 grams (approximate)...so I now have praline bites and then the bigger size. Also tried it with macadamia nuts...good, but because macnuts are smooth, harder to keep the caramel on...<br/>Thinking about trying to make pecan rolls and then just slice...will try next time.
